For the record, the Brut IPA style (also called BIPA) was created in 2018 in San Francisco by Kim Sturdavant, a Master Brewer who had the idea to add a specific enzyme (the amyloglucosidase) that transforms sugars into alcohol during the fermentation process. This new brewing method, which is still at its experimental stage, opens up infinite new possibilities and is not yet officially recognized as a real style.
It is now up to us, brewers, to innovate and make you discover this new style of beer that is unlike any other…
